Fettuccine with Fresh Lemon Sauce


Zest and juice of 2 fresh lemons, separated

2/3 c. Olive R Twist (ORTOO) Lemon Olive Oil

2/3 c. grated Parmesan cheese

3/4 tsp. freshly ground pepper

3/4 tsp kosher salt

1/3 c. fresh herbs, such as basil or oregano, chopped

1/3 c. fresh parsley, chopped, plus extra for garnish

1 lb. fettuccine or other pasta



In a large bowl, whisk ORTOO Lemon Olive Oil, Parmesan cheese, lemon juice, salt and pepper until well blended.  Set aside.  Cook fettuccine al dente, according to package instructions.  Drain pasta, reserving 1 cup of cooking water.  Add fettuccine to lemon sauce, along with fresh herbs, parsley and lemon zest.  Toss gently, adding hot water a little at a time to moisten.  Additional salt and pepper, to taste.

Garnish and serve immediately with additional Parmesan cheese and fresh pepper.  Delicious with grilled shrimp or scallops!
